Brewing Notes

Sift the matcha into a bowl, mug, or small pitcher to help prevent clumps in your cup.
Don't add all of the water at once. Add a splash of water and whisk into a smooth paste, then add the rest of your water and whisk until frothy.
For the best froth, use a bamboo matcha whisk and move it quickly in a loose “M” or “W” motion rather than stirring in circles.
A small kitchen whisk can work, but a handheld milk frother is the easiest shortcut for a smooth, foamy cup.
For an iced matcha, whisk or froth with a small amount of water first, then pour over ice and add cold water or milk.
For a latte, use less water and top with steamed or iced milk.
Do not steep and strain; matcha is meant to be whisked into the drink.
